CONSUMO DE FEIJÕES (Phaseolus) E SEU IMPACTO NA RESPOSTA GLICÊMICA PÓS-PRANDIAL

Introdução: O feijão é uma leguminosa pertencente à família Leguminosae e sub-família Papipilionoideae, é um excelente alimento, fornecendo nutrientes importantes para o organismo humano, como proteínas, minerais, vitaminas, carboidratos e fibras. O grão do feijão cru chega a apresentar aproximadamente de 18 a 33% de fibras alimentares e nos grãos cozidos esse teor fica em torno de 4,8 a 14%. O consumo regular de fibra alimentar pode reduzir a glicosilação da hemoglobina e melhorar o controle glicêmico, a porção proteica do feijão também tem sido relatada como hipoglicemiante. Objetivo: Avaliar o efeito do consumo regular de feijão sobre a resposta glicêmica pós-prandial. Metodologia: Trata-se de revisão integrativa que incluiu pesquisas realizadas com seres humanos, publicadas no período de 2008 a 2018, em inglês, português e espanhol, indexadas nas bases de dados Pubmed, ScienceDirect, MedLine e Lilacs, e que avaliassem o efeito da adição e/ou consumo de feijão na resposta glicêmica pós-prandial. Resultados: Foram analisados 9 artigos que avaliaram a resposta glicêmica relacionada ao consumo de Phaseolus vulgaris L. em humanos; os estudos em questão mostram que o consumo do feijão, isolado ou associado, pode modular a resposta glicêmica em humanos. Conclusão: O presente trabalho inovou ao abordar tal assunto, visto que são escassos os trabalhos comparando a relação do consumo regular desses grãos com a resposta glicêmica pós-prandial em humanos, por isso, sabe-se que mais estudos são necessários para esclarecer este contexto.
